It’s unique, indulgent, and a definitive must-try for any coffee lover. ​🍳 The Breakfast & Lunch Masterclass ​The food at Republik is just as much of a draw as the caffeine. We dove into two incredible dishes: ​The Benedict: Two perfectly poached eggs nestled over thick-cut, crispy bacon, fresh tomatoes, and vibrant arugula, all blanketed in a rich, velvety hollandaise sauce with a beautiful dusting of paprika. My favorite spot in Pasadena! Great vibes whether you’re catching up with friends or getting some work done. Love the matcha rose latte and cappuccino, both are amazing. Delicious and healthy food too.

Popular café and a bit hard to find an open and sometimes clean table. Having said that, the outside cushion seats are pretty comfortable and the back support angle excellent for me. Had a flat white, happy to see it was served in the right cup but this being the first time visiting, unsure if their espresso is always this sour or someone forgot to adjust the coffee grinder to a finer grit leading to an underextracted espresso TBD next visit. My wife commented on her Matcha latte with "it tastes like a matcha latte to me" and what I heard was, nothing to rave about. The chilaquiles on the other hand were flavourful with a unique tasty and yet not traditional sauce. Mildly spicy a bit pasty but not dry sauce. to me it tastes like some sort of achiote based sauce, the crisps were crispy and with a great texture. Topping were good but the eggs slightly overdone. French toasts tasted excellent, my only recommendation would be to dip the toasts a little longer so the batter makes it to the center so it's not dry.

New to Pasadena, I called ahead about parking, and the staff were incredibly helpful, guiding me to great options. Once inside, the vibe was energetic yet welcoming. I asked for something smooth and a little sweet, and they suggested an iced crushed cardamom oat latte. The sweet spice of cardamom and coconut condensed milk created a perfect balance. It was refreshing, smooth, and honestly one of the best lattes I’ve ever had. I’ll definitely be back!

Coffee was delicious also had the matcha also very good. We had the lavender matcha, and a ube cappuccino don't know the exact name. They were both out standing in flavor and appearance. We also tried the ham quiche the crust was nice and flaky and the egg filling had plenty of meat and had a good flavor. We also got the blueberry almond pound cake that also was delicious and the bread was nice and moist not dry.
